Ingredients
·         2 tbsp roasted and crushed peanuts
·         2 tbsp roasted sesame seeds (til)
·         1 cup blanched broccoli florets
·         1/2 cup diagonally sliced and blanched baby corn
·         1 cup sliced capsicum
·         1 cup sliced and blanched mushrooms (khumbh)
·         3 tbsp oil
·         1 cup paneer (cottage cheese) , cut into strips
·         2 tsp cornflour
·         1/2 cup orange juice
·         2 tsp soy sauce
·         Salt and freshly ground black pepper (kalimirch) to taste
Method
1.      Combine the cornflour, orange juice and soya sauce in a small bowl, mix well and keep aside.
2.      Heat 1½ tbsp of oil in a broad non-stick pan, add the paneer and sauté on a medium flame for 3 to 4 minutes. Keep aside.
3.      Heat the remaining 1½ tbsp of oil in a deep non-stick pan, add the broccoli, baby corn, capsicum and mushrooms and sauté on a medium flame for 1 to 2 minutes.
4.      Add the sautéed paneer and toss gently.
5.      Add the prepared orange juice-cornflour mixture, salt and pepper powder, mix well and cook on a medium flame for 2 to 3 minutes, while stirring continuously.
6.      Add the peanuts and sesame seeds and mix well.
7.      Serve immediately.
